What's For Dinner: Wild Rice Salad
What's For Dinner: Wild Rice Salad
October has a way of settling in, doesn't it? The air gets crisp, the leaves turn those deep, comforting shades of rust and gold, and suddenly, my kitchen feels like the coziest place on earth. It’s the time of year when I start craving meals that are hearty but still feel fresh, something that nourishes without being heavy. For an introvert like me, these cooler evenings are an invitation to slow down, to be still, and to find comfort in simple rhythms.
I often think about how seasons mirror our lives. Just like the trees let go of what they no longer need, there are times we're asked to release things too. It's not always easy, letting go of summer's long, sun-drenched days, but there's a quiet beauty in the fall, a promise of rest and renewal. It makes me reflect on how God’s timing is always perfect, even when it feels a bit chilly or uncertain. He always brings new things, often after a season of preparing. This wild rice salad feels a bit like that – full of good, grounding things, but with bright, unexpected bits that make it special.
This recipe came about one evening when I was looking for something substantial but not entirely hot. It’s become a real staple around here when I want something satisfying and full of good textures.
Ingredients
- 1 cup wild rice, rinsed
- 3 cups vegetable broth or water
- 1/2 cup dried cranberries or tart cherries
- 1/2 cup chopped pecans or walnuts, toasted
- 1/4 cup finely chopped red onion
- 1/2 cup crumbled feta cheese (optional, but I really like it)
- 1/4 cup fresh parsley, chopped
- For the Dressing:
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 tablespoon maple syrup or honey
- Salt and freshly ground black pepper to taste
Instructions
- First, cook the wild rice. Combine the rinsed wild rice and broth (or water) in a medium saucepan. Bring it to a boil, then reduce heat to low, cover, and simmer for about 45-50 minutes, or until the rice is tender and has started to burst open. Drain any excess liquid and fluff with a fork. Let it cool completely. I find it easiest to spread it out on a baking sheet to speed this up.
- While the rice cools, whisk together all the dressing ingredients in a small bowl. Give it a good stir until it's well combined.
- In a large bowl, combine the cooled wild rice, dried cranberries, toasted nuts, red onion, and crumbled feta (if you're using it).
- Pour the dressing over the wild rice mixture. Toss gently to make sure everything is evenly coated.
- Stir in the fresh parsley just before serving. Taste it and adjust salt, pepper, or a little more vinegar if it needs it. I like to let it sit for about 30 minutes for the flavors to meld, but it's good right away too.
This salad keeps well in the fridge for a few days, so it's excellent for lunch leftovers too. It's just a simple, good meal that fits the season. It reminds me that even in the quiet moments, there's always something nourishing and good to be found, if we just look for it. Sometimes the best things are simple, don't you think?
So, tell me, what's a comforting meal that helps you slow down and appreciate the season? I'd genuinely like to know.
