What's For Dinner: Salmon Pizza
What's For Dinner: Salmon Pizza
October always feels like a bit of a comforting hug from the year, doesn't it? The air gets that lovely crispness, the leaves put on their brightest show before settling in, and I find myself drawn to the kitchen more and more. There’s something special about the warmth and aroma of a meal cooking when the days start to shorten. Lately, I’ve been feeling a little nudge to step outside my usual dinner rotation, to try something a bit different, something that still feels homey but offers a pleasant surprise. And that, dear friends, is how Salmon Pizza made its way onto our table.
Now, I know what you might be thinking. "Salmon? On a pizza? Is she alright?" And to that, I'd say, "Give it a chance, friend. Sometimes the best blessings come in surprising packages, much like a good, hearty meal after a long day." It’s a little unconventional, perhaps, but isn't that often where some of the best joys are found? It reminds me a bit of how we journey through life's seasons. Some days are bright and predictable, like a classic pepperoni. Other days, you find yourself trying something completely new, and it turns out to be unexpectedly wonderful—a little whisper from above that there’s always more goodness to find, even in the unconventional.
This isn't a complex, fancy pizza. It's meant to be a simple, satisfying meal that brings a bit of warmth and a touch of something unique to your dinner routine. It’s perfect for those evenings when you want to feel a little bit fancy without all the fuss. Plus, smoked salmon is just one of those ingredients that feels like a treat, doesn't it?
Ingredients
- 1 pre-made pizza crust (I usually grab a thin or traditional one)
- 1/2 cup crème fraîche or sour cream (full-fat works best for creaminess)
- 1 tablespoon fresh dill, chopped (plus more for garnish)
- 1/2 teaspoon lemon zest
- Salt and freshly ground black pepper to taste
- 4-6 ounces smoked salmon, torn into pieces
- 1/4 cup thinly sliced red onion
- 2 tablespoons capers, drained
- Optional: a handful of fresh arugula or baby spinach for topping after baking
- A drizzle of good olive oil
Instructions
- Preheat your oven according to your pizza crust instructions, usually around 400-425°F (200-220°C).
- In a small bowl, gently stir together the crème fraîche (or sour cream), chopped dill, lemon zest, salt, and pepper. I always taste it here to make sure it's just right.
- Carefully spread the crème fraîche mixture evenly over the pizza crust, leaving a small border for the crust. This is your "sauce" base, and it's wonderfully creamy.
- Arrange the torn pieces of smoked salmon over the crème fraîche base. I like to scatter them a bit unevenly; it feels more rustic.
- Sprinkle the thinly sliced red onion and drained capers over the salmon.
- Drizzle a tiny bit of olive oil over the whole thing. It just helps everything meld together as it bakes.
- Bake for 10-15 minutes, or until the crust is golden brown and the toppings are warmed through. Keep an eye on it – ovens have their own personalities, after all.
- Once out of the oven, I sometimes like to add a handful of fresh arugula or baby spinach right on top. The heat from the pizza will wilt it just enough. A little extra fresh dill for garnish also makes it feel complete.
- Slice and serve immediately. Enjoy the murmurs of "Hmm, this is actually really good!" from anyone who might have been skeptical.
This Salmon Pizza has become one of those unexpected comforts in our home as the days grow shorter. It’s a reminder that sometimes the best things aren't necessarily the most traditional, but the ones we approach with an open heart and a willingness to try something new. As the autumn evenings draw in, I often find myself reflecting on the simple gifts around us – the changing colors, the cooler air, and the warmth of a shared meal.
I often wonder what small, unexpected joys others are finding in their own kitchens or in these changing days. What's been a surprising comfort for you lately, perhaps something that stepped outside your usual routine?
