What's For Dinner: Broccoli and Cranberry Salad

A simple, delicious dinner

October is here again, and with it, that particular shift in the air. You know the one? It’s not just the cooler breeze or the changing leaves; it’s a feeling in my bones that says, "Okay, we can slow down a little now." Summer’s vibrant, sometimes noisy, energy starts to recede, and I find myself craving the dependable comforts of home. For an introvert like me, it's a bit like the world is exhaling right alongside me, settling into a rhythm that feels just right.

This time of year, my kitchen habits tend to follow suit. Fancy, elaborate meals sometimes feel... too much. What I really want is something straightforward, nourishing, and maybe a little unexpected in its goodness. Something that doesn't demand hours of attention but still brings a smile. And that's where this broccoli and cranberry salad comes in.

I first stumbled upon a version of this salad years ago, and honestly, I was skeptical. Broccoli… raw? In a salad? But there’s something about the crisp texture paired with the tart sweetness of cranberries and a creamy dressing that just *works*. It’s a quiet kind of deliciousness, if that makes sense. It doesn't shout for attention, but it holds its own beautifully. It reminds me a bit of how God often works – in simple, unassuming ways that build into something truly wonderful, if we just pay attention.

Ingredients

  • 4 cups fresh broccoli florets, chopped into bite-sized pieces
  • 1/2 cup dried cranberries
  • 1/4 cup red onion, very thinly sliced or finely diced
  • 1/4 cup sunflower seeds (or chopped pecans for extra fall feel)
  • 1/2 cup mayonnaise (I prefer full-fat for creaminess)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon sugar (or a little less, to your taste)
  • Salt and black pepper to taste

Instructions

  1. First things first, make sure your broccoli is nicely chopped. I like smaller pieces so they're easier to eat and integrate into the salad. Give them a good rinse and pat them dry.
  2. In a large bowl, combine the chopped broccoli, dried cranberries, thinly sliced red onion, and sunflower seeds. I often just use my hands to toss them a little, making sure everything is evenly distributed.
  3. In a separate, smaller bowl, whisk together the mayonnaise, apple cider vinegar, and sugar until smooth. This is the simple dressing that brings it all together.
  4. Pour the dressing over the broccoli mixture. Toss everything gently until all the broccoli florets are coated. I usually use a spatula or two spoons for this, making sure not to mush anything.
  5. Season with salt and pepper. I always taste a little bit here to see if it needs more of anything – a pinch more salt, another dash of pepper, or even a tiny bit more sugar if the cranberries are particularly tart.
  6. For the best flavor, I think it's good to let it chill for at least 30 minutes in the refrigerator before serving. This allows the flavors to meld and the broccoli to soften just a touch, without losing its crunch.

This salad feels like a little moment of peace on my plate. It’s vibrant, but not loud. It’s got sustenance, but doesn’t weigh you down. It’s the kind of dish that whispers, "Everything’s going to be okay," even when the world outside feels a bit much. In this season of gathering and slowing down, I find myself deeply grateful for these small, everyday blessings.

I always enjoy hearing about what simple joys others are finding in their kitchens or their days. What little thing is bringing you a sense of quiet contentment lately?
