- 1 can (13.5 oz) full-fat coconut milk

- Fresh cilantro or parsley for garnish (optional)
Instructions
- In a large pot or Dutch oven, warm the oil over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
- Stir in the minced garlic and grated ginger. Cook for another minute until fragrant, being careful not to let the garlic brown.
- Add the chopped carrots, vegetable broth, and curry powder (if using) to the pot. Bring the mixture to a simmer, then reduce the heat, cover, and let it cook for 15-20 minutes, or until the carrots are very tender.
- Carefully pour the soup into a blender (or use an immersion blender directly in the pot) and blend until completely smooth. If using a regular blender, work in batches and be mindful of hot liquids.
- Return the blended soup to the pot. Stir in the coconut milk. Heat gently until warmed through, but do not boil.
- Season with salt and pepper to your liking. I often find it needs a good pinch of both.
- Ladle into bowls and, if you fancy, top with a little fresh cilantro or parsley.
