  • Optional garnish: fresh parsley or cilantro, a swirl of coconut milk

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a large baking sheet, toss the chopped carrots, onion, smashed garlic, and ginger with the olive oil. Spread them out in a single layer.
  3. Roast for 25-30 minutes, or until the carrots are tender and slightly caramelized at the edges. I like how the roasting brings out such a depth of flavor.
  4. Carefully transfer the roasted vegetables to a large pot or Dutch oven.
  5. Pour in the vegetable broth. Bring to a simmer over medium heat, then reduce heat and let it cook for about 5-7 minutes, allowing the flavors to meld.
  6. Remove the pot from the heat. Using an immersion blender, blend the soup directly in the pot until it's smooth and creamy. If you don't have an immersion blender, carefully transfer the soup in batches to a regular blender (be sure to vent the lid to allow steam to escape) and blend until smooth.
  7. Stir in the coconut milk. Season with salt, black pepper, and the optional pinch of cayenne pepper. Adjust seasonings to your liking.
  8. Return to low heat and warm through, but don't boil.
  9. Serve warm, perhaps with a sprinkle of fresh herbs or an extra swirl of coconut milk if you're feeling fancy. I just usually spoon it into a bowl and call it good.
