What's For Dinner: Sweet Potato Curry
August, for me, always feels like a bit of a holding breath. The summer sun is still bright, but there’s a certain crispness in the early morning air that whispers of change. Gardens are overflowing, and my own internal rhythm starts to lean towards comfort food, even if it's still warm outside. I find myself wanting meals that feel substantial but don't demand hours over a hot stove. It’s a time to savor what is, I think, before the rush of autumn truly sets in. And on those kinds of evenings, this sweet potato curry often comes to mind. I'm not one for overly complicated recipes, especially after a day that's already been full. I appreciate a meal where the ingredients just seem to know how to get along, creating something warm and satisfying without too much fuss. This curry has that quality. It’s got a lovely depth of flavor, a little bit of spice, and the sweet potatoes just melt into the sauce. It feels nourishing, like a good, quiet hug. Sometimes, a simple bowl of something warm is just what's needed to settle the day. There's a particular kind of peace in knowing a good meal is coming, isn't there? A small grace in the everyday.
Ingredients
- 1 tablespoon coconut oil or olive oil
- 1 large onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon fresh ginger, grated (or 1 teaspoon ground ginger)
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon cayenne pepper (or to taste, I like a little kick)
- 2 large sweet potatoes, peeled and diced into 1-inch cubes
- 1 can (13.5 oz) full-fat coconut milk
- 1 cup vegetable broth
- 1 can (15 oz) diced tomatoes, undrained
- 1 can (15 oz) chickpeas, rinsed and drained
- A handful of fresh spinach or kale, roughly chopped
- Salt and freshly ground black pepper to taste
- Fresh cilantro, chopped, for garnish (optional, but I think it brightens things up)
- Cooked rice or naan bread, for serving
Instructions
- In a large pot or Dutch oven, warm the oil over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
- Stir in the minced garlic and grated ginger. Cook for another minute until fragrant.
- Add the cumin, coriander, turmeric, and cayenne pepper. Stir well and cook for about 30 seconds, letting the spices toast a bit. This really helps their flavors develop, I've noticed.
- Add the diced sweet potatoes, coconut milk, vegetable broth, and diced tomatoes (with their liquid) to the pot. Stir to combine everything.
- Bring the mixture to a simmer, then reduce the heat to low, cover, and let it cook for 15-20 minutes, or until the sweet potatoes are tender when pierced with a fork.
- Stir in the rinsed and drained chickpeas and the fresh spinach or kale. Continue to cook for another 3-5 minutes, or until the greens have wilted.
- Taste the curry and season with salt and pepper as needed. Sometimes a little extra salt just makes all the flavors sing.
- Ladle the curry into bowls. I like to top mine with a sprinkle of fresh cilantro, especially if I have some on hand. Enjoy it warm with a side of rice or a piece of naan.
