It's a time when I find myself wanting meals that are both comforting and straightforward. My mind, much like the sun-drenched garden, is ready for a bit of rest from anything overly complicated. This is when a good, honest meal like steak and potato salad comes to mind. It’s familiar, it’s satisfying, and it doesn’t ask too much of you.
I think there’s a quiet beauty in keeping things simple, especially in the kitchen. Ingredients
For the Steak:

For the Potato Salad:
- 2 lbs red or Yukon Gold potatoes, peeled and cubed (or left with skins on, if that’s your preference)
- 3-4 hard-boiled eggs, chopped
- 1/2 cup mayonnaise (or more, to taste)
- 1/4 cup yellow mustard or Dijon mustard
- 1/4 cup finely chopped celery
- 1/4 cup finely chopped red onion or green onions
- 1-2 tablespoons pickle relish (sweet or dill, depending on what you like)
- Salt and pepper to taste
- Optional: A dash of paprika for color, fresh dill or parsley for garnish
Instructions
For the Steak:
- Take your steak out of the refrigerator about 30 minutes before cooking to let it come closer to room temperature. This helps it cook more evenly.
- Pat the steak dry with paper towels. I find this really helps get a good sear.
- Season generously on both sides with salt, pepper, and any other seasonings you’re using.
- Heat a heavy-bottomed pan (cast iron is my favorite for this) over medium-high heat. Add a tiny bit of olive oil – just enough to coat the pan.
- Once the pan is hot (you might see a wisp of smoke), carefully place the steak in. Sear for 3-5 minutes per side for medium-rare, or adjust to your preferred doneness. If you’re using thicker cuts, you might finish them in a preheated oven at 375°F for a few minutes.
- Remove the steak from the pan and let it rest on a cutting board for at least 5-10 minutes before slicing against the grain. This is important; it lets the juices redistribute.
For the Potato Salad:
- Place the cubed potatoes in a large pot and cover with cold, salted water. Bring to a boil, then reduce heat and simmer until the potatoes are fork-tender, about 10-15 minutes. Be careful not to overcook them; nobody likes mushy potato salad.
- While the potatoes are cooking, in a large bowl, combine the mayonnaise, mustard, celery, red onion (or green onions), relish, and a good pinch of salt and pepper. Stir it all together.
- Once the potatoes are cooked, drain them well and let them cool for a few minutes. I usually let them sit in the strainer for about 5 minutes to release some steam.
- Add the slightly cooled potatoes and chopped hard-boiled eggs to the dressing mixture. Gently fold everything together until the potatoes are evenly coated.
- Taste and adjust seasonings as needed. Sometimes it needs a little more salt, or maybe a bit more mustard for a kick.
- Cover the bowl and refrigerate for at least an hour to let the flavors meld. It really does taste better after it’s had some time to sit.
Serving this meal feels like a little exhale in the midst of August’s lingering warmth. The satisfying chew of the steak pairs so well with the creamy, cool potato salad. It’s a reminder that good things don’t always have to be complicated to be truly wonderful.
