Instructions

  1. Preheat your oven to 400°F (200°C).
  2. On a large baking sheet, toss the chopped bell pepper, zucchini, red onion, and cherry tomatoes with 2 tablespoons of olive oil, salt, and pepper. I usually just spread them out evenly so they get a nice roast.
  3. Roast for 20-25 minutes, or until the vegetables are tender and slightly caramelized at the edges. Give them a stir halfway through.
  4. While the vegetables are roasting, prepare the couscous. Place the dry couscous in a heatproof bowl. Pour the boiling water or broth over it, add a pinch of salt, cover the bowl, and let it sit for 5 minutes. After 5 minutes, fluff it with a fork.
  5. Once the roasted vegetables are ready, let them cool slightly.
  6. In a large bowl, combine the fluffed couscous, roasted vegetables, chopped fresh parsley, and lemon juice. Add another drizzle of olive oil, salt, and pepper to taste. I like to taste it here and adjust anything that feels right.
  7. Serve warm or at room temperature. If I'm feeling fancy, I'll add a sprinkle of feta or some crunchy almonds. It just adds a little something extra.
