What's For Dinner: Roasted Vegetable Bowls

  • Optional: 1 cup cherry tomatoes or zucchini, added halfway through roasting
  • 2-3 tablespoons olive oil
  • 1 teaspoon dried herbs (rosemary, thyme, or an Italian blend work well)
  • 1/2 teaspoon garlic powder
  • Salt and freshly ground black pepper to taste
  • Optional for serving: Cooked grains (quinoa, farro, rice), a sprinkle of feta cheese, or a drizzle of balsamic glaze.

Instructions

  1. Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
  2. In a large bowl, combine all the chopped vegetables (except for optional cherry tomatoes/zucchini if using).
  3. Drizzle the olive oil over the vegetables. Toss gently to coat everything evenly.
  4. Sprinkle the dried herbs, garlic powder, salt, and pepper over the vegetables. Toss again to distribute the seasonings.
  5. Spread the seasoned vegetables in a single layer on the prepared baking sheet. Try not to overcrowd the pan; if necessary, use two sheets to ensure even roasting and browning. That’s key for those lovely crispy bits!
  6. Roast for 20 minutes, then remove the pan from the oven and carefully toss the vegetables. If adding cherry tomatoes or zucchini, introduce them now.
  7. Return to the oven and continue roasting for another 15-20 minutes, or until the vegetables are tender and slightly caramelized at the edges. Cooking times can vary based on your oven and the size of your vegetable pieces.
  8. Once roasted, let the vegetables cool for a few minutes.
  9. Serve warm, either on their own or over your favorite cooked grain. I sometimes add a little crumble of feta or a splash of balsamic at the end for an extra layer of flavor.
