What's For Dinner: Roasted Everything Cauliflower
What's For Dinner: Roasted Everything Cauliflower
August always feels like a deep breath before the world starts bustling again. The days are still long, but there’s a certain golden hue to the light, a hint of what’s coming. For someone like me, who appreciates a bit of quiet observation, it’s a good time to slow down, to notice the small things. I find myself drawn to simple comforts, the kind of meals that don't ask too much but give a lot back.
I remember a time when cauliflower wasn't really on my radar, beyond maybe a steamed side dish. It felt a bit… plain. But then I stumbled upon the magic of roasting, and everything changed. It’s funny how something so unassuming can become genuinely delightful with just a little heat and a few good friends in the spice cabinet. It reminds me a bit of life, honestly. Sometimes the most straightforward paths or the quietest moments hold the most unexpected blessings, if we're just open to seeing them. A simple truth, I suppose, much like how grace often appears in the everyday.
This "Roasted Everything Cauliflower" has become a regular in my kitchen. It's adaptable, satisfying, and honestly, a joy to make on an evening when I want something comforting without a lot of fuss. It lets the main ingredient shine, which I appreciate.
Ingredients
- 1 large head of cauliflower, cut into bite-sized florets
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- ½ teaspoon onion powder
- ¼ teaspoon cayenne pepper (optional, for a little kick)
- Salt and freshly ground black pepper to taste
- Optional: 2 tablespoons grated Parmesan cheese or nutritional yeast (for a cheesy flavor)
- Optional: Fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 400°F (200°C). Line a large baking sheet with parchment paper for easier cleanup.
- In a large bowl, combine the cauliflower florets, olive oil, garlic powder, smoked paprika, onion powder, cayenne pepper (if using), salt, and pepper. Toss everything together until the cauliflower is evenly coated. I like to use my hands for this; it feels more personal.
- Spread the seasoned cauliflower in a single layer on the prepared baking sheet. Don't overcrowd the pan, or the cauliflower will steam instead of roast. If necessary, use two baking sheets.
- Roast for 20-25 minutes, flipping the florets halfway through, until the cauliflower is tender-crisp and beautifully caramelized at the edges.
- If you're using Parmesan or nutritional yeast, sprinkle it over the cauliflower during the last 5 minutes of roasting, or right after it comes out of the oven.
- Garnish with fresh parsley, if desired. Serve warm as a side or a light main dish.
It’s such a simple dish, but it carries a surprising amount of flavor and warmth. Perfect for an August evening when the sun is setting, and you're just enjoying the quiet hum of your own home. It’s a good reminder that often, the best things are right in front of us, often in plain sight, waiting for us to really see them. I find a lot of peace in that thought.
For you, what simple comforts are you leaning into as summer's warm days slowly give way?
