Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large oven-safe skillet or Dutch oven (or a regular skillet if transferring to a baking dish later), heat the olive oil over medium heat.
  3. Add the chopped onion and cook until softened, about 5-7 minutes.
  4. Stir in the minced garlic and cook for another minute until fragrant.
  5. Add the rinsed and drained chickpeas, crushed tomatoes, vegetable broth, oregano, and basil. Stir well to combine.
  6. Season generously with salt and pepper. Give it a taste and adjust seasonings if needed.
  7. If using, stir in the spinach or kale until it just starts to wilt.
  8. Bring the mixture to a gentle simmer, then remove from heat.
  9. If not using an oven-safe skillet, transfer the mixture to a 9x13 inch baking dish.
  10. If you like, sprinkle with breadcrumbs or grated cheese for a little extra texture and flavor.
  11. Bake for 20-25 minutes, or until bubbly and heated through. The top should be lightly golden if you added a topping.
  12. Let it rest for a few minutes before serving. It’s lovely on its own, or with a side of crusty bread.
