What's For Dinner: Butternut Squash Soup

It’s still August, and the summer sun is putting on its best show, but if you look closely, you can almost see the leaves thinking about turning. The days are long and warm, but there’s a quiet shift in the air as evening arrives. I’ve been reflecting on how life often feels a bit like this: a season winding down while the next one is already peeking around the corner. It's a funny, in-between time, isn't it?

Sometimes, when I feel those subtle changes, I find myself drawn to simple comforts. Even though we’re far from chilly evenings, I was thinking about one of my favorite, most grounding meals: butternut squash soup. It’s warm, yes, but it’s also sweet and gentle, a little ray of sunshine in a bowl. It reminds me that even when things are changing, there’s always goodness to be found, a steady kindness that runs through it all, much like the steadfast mercies we’re promised each morning.

For me, making soup is a bit of a meditation. There’s something so satisfying about the chopping, the simmering, the way the kitchen fills with a warm, comforting smell. It slows me down. I like a recipe that lets me putter a bit, and this one is just right. It’s not fancy, and it doesn't ask for a lot, but it always delivers a sense of peace. Ingredients

  • 1 medium butternut squash (about 2-3 lbs), peeled, seeded, and cut into 1-inch cubes
  • 1 medium sweet onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable broth (or chicken broth, if you prefer)
  • 1 tablespoon olive oil
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon ground cinnamon
  • Salt and freshly ground black pepper to taste
  • Optional: A splash of cream or coconut milk for richness
  • Optional Garnish: Toasted pumpkin seeds or a swirl of crème fraîche

Instructions

  1. Preheat your oven to 400°F (200°C). Toss the butternut squash cubes with 1/2 tablespoon of olive oil, a pinch of salt, and pepper on a baking sheet. I like this step because roasting brings out a wonderful natural sweetness in the squash. Roast for 20-25 minutes, or until fork-tender and slightly caramelized.
  2. While the squash roasts, heat the remaining 1/2 tablespoon of olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes.
  3. Stir in the minced garlic, nutmeg, and cinnamon. Cook for another minute until fragrant. It always makes the kitchen smell so cozy.
  4. Add the roasted butternut squash to the pot along with the vegetable broth. Bring the mixture to a gentle simmer. Reduce the heat and let it cook for about 10-15 minutes, allowing the flavors to meld.
  5. Carefully, use an immersion blender to blend the soup directly in the pot until it's smooth and creamy. If you don't have an immersion blender, you can transfer the soup in batches to a regular blender (be very careful with hot liquids!).
  6. Taste and adjust seasonings with more salt, pepper, or a tiny bit more nutmeg if you like. This is where you make it truly yours.
  7. If you’re feeling a little extra, stir in a splash of cream or coconut milk for an even richer texture. I find it adds a lovely velvety finish.
  8. Serve warm, perhaps with a scattering of toasted pumpkin seeds or a small swirl of crème fraîche. It’s a simple pleasure.

There's something deeply comforting about a bowl of this soup. It reminds me that even in the in-between times, there's warmth and goodness to be found, a quiet grace in the everyday. It's a reminder to nourish ourselves, body and soul, as we move through the seasons God gives us.
