Something To Celebrate: Fajita Day

August 18th is National Fajita Day, a holiday that exists specifically to honor the sizzling, aromatic, slightly theatrical plate of food that announces itself from across the restaurant before it even reaches your table.
There is something quietly wonderful about a meal that does this much of the social heavy lifting for you. The fajita arrives, everyone at the table turns to look, and for one beautiful moment, no one has to think of anything clever to say. The skillet says it all. For those of us who find small talk a little exhausting, this is practically a gift.
