  • 1/4 cup all-purpose flour (or a gluten-free alternative)
  • 2 cups milk (dairy or non-dairy, I often use whole milk for creaminess)
  • 1/2 teaspoon dried thyme
  • Salt and freshly ground black pepper to taste
  • Fresh parsley or chives, chopped, for garnish (optional)

Instructions

  1. In a large pot or Dutch oven, melt the butter (or heat the olive oil) over medium heat. Add the chopped onion, carrots, and celery. Cook until softened, about 5-7 minutes, stirring occasionally.
  2. Stir in the diced bell pepper and continue to cook for another 3 minutes until slightly softened.
  3. Sprinkle the flour over the vegetables and stir well to coat them. Cook for 1-2 minutes, stirring constantly, to cook out the raw flour taste.
  4. Gradually pour in the vegetable broth, stirring continuously to prevent lumps. Add the diced potatoes and dried thyme. Bring the mixture to a simmer, then reduce the heat to low, cover, and cook for 15-20 minutes, or until the potatoes are tender.
  5. Stir in the corn and green beans (if using). Pour in the milk and bring the chowder back to a gentle simmer, stirring occasionally. Be careful not to boil to prevent the milk from scorching.
  6. Season the chowder with salt and freshly ground black pepper to your liking. Taste and adjust seasonings as needed.
  7. Ladle the warm chowder into bowls. Garnish with fresh parsley or chives, if desired. Serve immediately and enjoy the warmth.
