What's For Dinner: Tomato Soup
What's For Dinner: Tomato Soup
July is a peculiar month, isn't it? Full of bright, long days, the world feels lush and vibrant. My garden, bless its heart, is overflowing with green things, promising future bounty. Yet, even amidst all that outward exuberance, I often find myself craving moments of quiet and simplicity. Sometimes, the best way to embrace the season’s abundance, and also find a bit of grounding, is to turn to something wonderfully uncomplicated, something that feels like a warm hug on a cool evening or a respite from the midday sun. For me, recently, that's been a truly good bowl of tomato soup.
There's a humility in tomato soup, I think. It doesn't ask for much, but it gives generously. It reminds me that even the most straightforward ingredients, when treated with a bit of care, can yield something deeply comforting and satisfying. Much like how a simple act of kindness, given freely, can brighten someone's entire day. It’s a gentle reminder that beauty and goodness often reside in the unassuming, the everyday provisions God places before us.
This isn't a fancy, restaurant-style soup. This is the kind you make when you need warmth, when you're feeling a little introspective, or when you just want to taste something pure and true. It's the kind of meal that welcomes a grilled cheese sandwich companion and a quiet evening spent reflecting. Let's make some, shall we?
Ingredients
- 2 tablespoons olive oil
- 1 medium yellow onion, finely chopped
- 2 cloves garlic, minced
- 2 (28 ounce) cans crushed tomatoes (good quality makes a difference!)
- 4 cups vegetable broth (or chicken broth, if you prefer)
- 1/2 cup heavy cream (optional, but lovely for richness)
- 1 teaspoon sugar (just a pinch to balance acidity)
- 1/2 teaspoon dried basil (or a small handful fresh, chopped)
- Salt and black pepper to taste
- A sprig of fresh basil or a swirl of cream for garnish (also optional!)
Instructions
- In a large pot or Dutch oven, warm the olive oil over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes. Take your time here; a good base means good flavor.
- Stir in the minced garlic and cook for another minute until fragrant. Oh, that smell – it's already promising!
- Pour in the crushed tomatoes and vegetable broth. Add the sugar and dried basil. Stir everything together gently.
- Bring the soup to a simmer, then reduce the heat to low, cover, and let it cook for at least 20-30 minutes. This allows all the flavors to deepen and meld. Sometimes, I let it go longer if I'm puttering around the house.
- Once cooked, you have a choice: for a chunky soup, you're good to go. For a smoother consistency, use an immersion blender directly in the pot, or carefully transfer batches to a regular blender (be very careful with hot liquids!). Blend until your desired smoothness is reached.
- Stir in the heavy cream, if using, and heat through for a few more minutes, but do not bring to a boil once the cream is added.
- Season with salt and pepper to taste. You might be surprised how much salt really brings out the tomato flavor. Taste, adjust, and taste again.
- Ladle into bowls, perhaps with a sprinkle of fresh basil or a little extra swirl of cream. Serve warm, with gratitude.
In this bustling July, when the world seems to call us to constant activity, may we make space for these simple, sustaining moments. May we remember that sometimes the most profound nourishment comes from the most ordinary things, shared with a willing heart. It’s a comfort to know that even in the midst of summer’s warmth, a simple bowl of soup can remind us of life’s good and steady provisions.
What helps you find that quiet comfort and connection in the midst of a busy season?
