What's For Dinner: Tomato Basil Soup
What's For Dinner: Tomato Basil Soup
Ah, July. The world outside is a vibrant hum of activity, urging us to bask in sunshine, attend barbecues, and generally be 'out and about.' My introverted heart, however, often feels a gentle pull towards a different kind of summer enjoyment: the cool reprieve of indoors, a good book, and the simple satisfaction of creating something nourishing in my kitchen. It's a season of abundant growth, and just as the garden explodes with life, I find a quiet joy in making the most of what it provides. This time of year, with tomatoes at their absolute peak – ripe, juicy, and smelling like pure summer – there's one recipe that always calls to me: Tomato Basil Soup. It’s a dish that isn't flashy, doesn't demand center stage, but offers profound comfort. It reminds me that often, the most wonderful things in life are found in simplicity, in genuine ingredients coming together to offer a gentle, soul-satisfying warmth. Much like a heartfelt conversation with a dear friend, or a scripture verse that settles deep within, this soup is a blessing in a bowl. It's a wonderful way to honor the season's bounty and to create a moment of peace amidst the summer bustle. So, if you're like me and sometimes prefer a spoonful of calm to a flurry of excitement, this recipe might just be for you.
Ingredients
- 2 tablespoons olive oil
- 1 medium yellow onion, chopped
- 2 cloves garlic, minced
- 2 (28-ounce) cans crushed tomatoes (or about 6-8 fresh, very ripe tomatoes, peeled and chopped)
- 4 cups vegetable broth (or chicken broth, if preferred)
- 1/2 cup heavy cream (optional, for a richer soup)
- 1/2 cup fresh basil leaves, chopped, plus more for garnish
- 1 teaspoon sugar (optional, to balance acidity)
- Salt and freshly ground black pepper to taste
- Pinch of red pepper flakes (optional, for a little warmth)
Instructions
- Sauté Aromatics: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and cook until softened and translucent, about 5-7 minutes. Add the minced garlic and red pepper flakes (if using) and cook for another minute until fragrant.
- Add Tomatoes and Broth: Pour in the crushed tomatoes and vegetable broth. If using fresh tomatoes, add them here. Stir well to combine.
- Simmer: Bring the mixture to a gentle simmer. Reduce the heat to low, cover, and let it cook for at least 20-25 minutes, allowing the flavors to meld beautifully. If using fresh tomatoes, allow it to simmer longer, about 30-40 minutes, until they break down.
- Blend (Optional): For a smoother soup, carefully use an immersion blender directly in the pot, or transfer batches to a regular blender (be cautious with hot liquids!) and blend until creamy. Return to the pot if using a regular blender.
- Finish with Cream and Basil: Stir in the heavy cream (if using) and the chopped fresh basil. Add the sugar (if using), and season generously with salt and freshly ground black pepper. Taste and adjust seasonings as needed.
- Serve: Ladle the warm soup into bowls. Garnish with a few extra fresh basil leaves, a swirl of cream, or some homemade croutons. It’s particularly lovely with a grilled cheese sandwich for dipping.
