What's For Dinner: Shrimp Salad
What's For Dinner: Shrimp Salad
July. It's that time of year when the sun feels like a persistent friend, radiating warmth long into the evening. For an introvert like me, these long, bright days sometimes feel like an invitation to step outside my usual comfort zone, pushing me towards more social engagements. But even then, there's a need for moments of stillness and simple sustenance, meals that don't demand much fuss but offer plenty of comfort. It's a bit like life, isn't it? We're called to be present, to shine light, but also to remember our need for reflection and straightforward goodness. And that's exactly what this shrimp salad brings to my table – a little pocket of calm deliciousness in the midst of summer's vibrant hum. When the temperatures climb and the thought of standing over a hot stove feels less like cooking and more like an endurance test, I reach for recipes that promise coolness and flavor without the heavy lifting. Shrimp salad is an unassuming champion in this regard. It’s light, it’s fresh, and it lets the natural sweetness of the shrimp speak for itself. It’s also incredibly versatile – perfect on a bed of greens, tucked into a croissant, or even just eaten with a spoon straight from the bowl (no judgment here!). It reminds me that sometimes the most satisfying things are those that are unassuming, made with simple ingredients, put together with a little care. It's a blessing to have such straightforward goodness.
Ingredients
- 1 lb cooked shrimp, peeled, deveined, and chopped (I often buy them pre-cooked to make life even easier!)
- 1/2 cup mayonnaise (or plain Greek yogurt for a lighter touch)
- 2 celery stalks, finely diced
- 1/4 cup red onion, finely minced (if you like a little bite, just a whisper will do)
- 1 tablespoon fresh dill, chopped (or 1 teaspoon dried)
- 1 tablespoon fresh lemon juice
- Salt and black pepper to taste
- Optional: a pinch of paprika for color, or a dash of hot sauce for a sweet kick
Instructions
- In a medium bowl, combine the chopped shrimp, mayonnaise (or yogurt), diced celery, minced red onion, and fresh dill.
- Add the fresh lemon juice, salt, and pepper. Carefully stir everything together until the shrimp is well coated. Remember, careful is key here – we want to respect the shrimp!
- Taste and adjust seasonings as needed. This is your moment to make it truly yours.
- Cover the bowl and refrigerate for at least 30 minutes to allow the flavors to meld. A little patience often yields the best results, doesn't it?
- Serve chilled on lettuce wraps, in a sandwich, or simply alongside some crackers.
