Instructions

  1. In a large skillet or Dutch oven, heat the olive oil over medium-high heat. Add the chicken pieces and season with a pinch of salt and pepper. Cook until browned on all sides and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.
  2. Reduce the heat to medium. Add the chopped onion to the skillet and cook until softened, about 3-4 minutes. Then, add the minced garlic and cook for another minute until fragrant.
  3. Pour in the chicken broth and bring it to a simmer. Stir in the orzo pasta.
  4. Return the cooked chicken to the skillet. Reduce the heat to low, cover, and let it simmer for about 10-12 minutes, or until the orzo is tender and most of the liquid has been absorbed. Give it a stir occasionally to prevent sticking.
  5. Remove the skillet from the heat. Stir in the chopped sun-dried tomatoes, fresh spinach, and Parmesan cheese. Continue to stir until the spinach wilts.
  6. Taste and adjust seasoning with salt and pepper as needed.
  7. Serve warm, topped with extra Parmesan cheese and fresh parsley, if you’re feeling fancy.
