It uses the season's sweet bounty – fresh corn kernels just bursting with flavor – and weaves them into a meal that nourishes both body and spirit. There's a certain satisfaction in taking simple, good ingredients and creating something truly lovely. It reminds me a bit of how life works, doesn't it? Taking what's given, sometimes plain and sometimes abundant, and finding the goodness within, letting it simmer and meld into something rich and meaningful.

  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • Pinch of cayenne pepper (optional, for a little warmth)
  • Fresh chives or parsley, chopped, for garnish

Instructions

  1. In a large pot or Dutch oven, melt the butter over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes.
  2. Stir in the minced garlic and cook for another minute until fragrant.
  3. Whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a roux. This will help thicken the chowder.
  4. Gradually pour in the vegetable broth, whisking continuously to prevent lumps. Bring the mixture to a simmer.
  5. Add the diced potatoes and corn kernels to the pot. Bring back to a simmer, then reduce heat to medium-low, cover, and cook for 15-20 minutes, or until the potatoes are tender.
  6. Pour in the milk and heavy cream (if using). Stir well and heat through, but do not bring to a rolling boil once dairy is added.
  7. Season with salt, black pepper, and a pinch of cayenne if you like a little kick. Taste and adjust seasonings as needed.
  8. For a creamier chowder, you can carefully scoop out about 1-2 cups of the chowder (mostly corn and potatoes) and blend it with an immersion blender or in a regular blender until smooth, then return it to the pot. This creates a lovely texture without needing to blend the whole batch.
  9. Serve warm, garnished with fresh chives or parsley.
