What's For Dinner: Caprese Pasta Salad

A simple, delicious dinner

It's July, and the sun is certainly making its presence known. Sometimes, the mere thought of standing over a hot stove feels like a personal challenge I'm just not up for. My ideal summer evening usually involves a good book, a tall glass of iced tea, and a comfortable chair far from any heat source. Yet, we do need to eat, don't we? Our bodies, and sometimes our souls, need sustenance that nourishes without demanding too much in return, like a quiet friend who knows exactly what you need without a word.

It's in these moments, when the desire for something utterly fresh and delicious collides with my preference for minimal effort, that I turn to simple wonders. This Caprese Pasta Salad is one of those truly good things. It’s light, vibrant, and comes together with such ease that it feels like a small, thoughtful gift to myself and anyone else at my table. It reminds me that even when the world feels loud or overwhelming, there's always goodness to be found in the simple provisions around us, much like the steady, comforting presence of grace in our lives.

Ingredients

  • 8 oz pasta (penne, rotini, or farfalle are excellent choices)
  • 1 pint cherry or grape tomatoes, halved
  • 8 oz fresh mozzarella balls (bocconcini or ciliegine), halved or quartered
  • 1/2 cup fresh basil leaves, roughly chopped or torn
  • 2 tablespoons good quality olive oil
  • 1-2 tablespoons balsamic glaze (store-bought or homemade works beautifully)
  • Salt and freshly ground black pepper to taste

Instructions

  1. Cook the pasta according to package directions until it’s al dente. Drain it thoroughly and then rinse with cold water. This stops the cooking process and cools the pasta down, which is perfect for a salad. Set it aside while you gather the rest.
  2. While the pasta is getting cool, prepare your other ingredients. Halve all your cherry tomatoes and the fresh mozzarella balls. Gently tear or chop your fresh basil leaves.
  3. In a large mixing bowl, combine the cooled pasta, the halved tomatoes, the mozzarella, and your fragrant fresh basil.
  4. Drizzle everything generously with olive oil, then season with salt and freshly ground black pepper to your liking. Toss gently to ensure all the ingredients are lightly coated and happy together.
  5. Just before you’re ready to serve, drizzle with the balsamic glaze. You can add more or less depending on how sweet and tangy you like your salad.
  6. Serve it up immediately, or if you prefer the flavors to mingle a bit more, pop it in the fridge for a short while. It’s truly delightful either way!
