A simple, delicious dinner

There’s a beautiful simplicity in gathering good things – crisp lettuce, bright peppers, maybe some creamy hummus – and bringing them together in a soft tortilla. It reminds me a bit of how God often works in our lives, taking disparate, useful parts and weaving them into something whole and nourishing. No fanfare, just steady goodness. Especially as the days grow long and the world outside hums with summer activity, I find myself craving meals that offer a momentary stillness, a chance to simply be.

This isn't just about speed; it's about making a meal that feels like a comfortable sigh. It’s about accepting the beauty of fresh, readily available ingredients without needing to complicate things. Ingredients

  • 1/4 cup hummus or spread of choice (e.g., avocado spread, baba ghanoush)
  • 1/2 cup mixed greens (spinach, romaine, spring mix)
  • 1/4 cup shredded carrots
  • 1/4 cup thinly sliced cucumber
  • 1/4 cup bell pepper, thinly sliced (any color works!)
  • 2 tablespoons red onion, thinly sliced (optional, for a little zing)
  • 1/4 cup cooked chickpeas or black beans (for extra protein, if desired)
  • A sprinkle of crumbled feta or goat cheese (optional)
  • A dash of your favorite vinaigrette or a squeeze of lemon juice (optional)
  • Salt and pepper to taste

Instructions

  1. Lay a tortilla flat on a clean surface or plate.
  2. Spread a generous layer of hummus or your chosen spread across the entire tortilla, leaving about an inch clear around the edges. This acts as our foundational flavor and helps hold everything together.
  3. Arrange the mixed greens down the center of the tortilla.
  4. Layer the remaining vegetables (carrots, cucumber, bell pepper, red onion) over the greens. Distribute them evenly, but don't overstuff!
  5. Add your chickpeas or cheese, if using.
  6. Season lightly with salt, pepper, and a dash of vinaigrette or lemon juice if you like extra moisture and flavor.
  7. To roll: Fold the bottom edge of the tortilla up and over the filling. Then, fold in the sides towards the center, tightly enclosing the filling. Continue to roll upwards, keeping it snug, until you have a compact wrap.
  8. Cut your wrap in half diagonally (it just looks nicer that way, doesn't it?) and serve immediately.
