- 1 (15 oz) can crushed tomatoes or 1.5 cups marinara sauce
- 1/2 cup breadcrumbs (gluten-free if preferred)
- 1/2 cup shredded mozzarella cheese, plus more for topping
- 1/4 cup grated Parmesan cheese
- 1 tsp dried oregano
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish large enough to hold your zucchini halves.
- Wash the zucchinis and cut them in half lengthwise. Using a spoon, carefully scoop out the flesh, leaving about a 1/4-inch border around the edges. Chop the scooped-out zucchini flesh (about 1 cup) and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the ground meat and cook, breaking it up with a spoon, until it's browned. Drain any excess fat.
- Add the chopped onion and the reserved zucchini flesh to the skillet with the meat. Cook for 5-7 minutes, until the onion softens. Stir in the minced garlic and cook for another minute until fragrant.
- Stir in the crushed tomatoes or marinara sauce, oregano, salt, and pepper. Bring to a gentle simmer, then reduce heat and let it cook for 5 minutes, allowing the flavors to meld.
- Remove the skillet from the heat. Stir in the breadcrumbs, 1/2 cup mozzarella, and Parmesan cheese. Mix well until everything is combined.
- Arrange the hollowed-out zucchini halves in your prepared baking dish. Carefully spoon the meat mixture into each zucchini boat, mounding it slightly.
- Cover the baking dish with foil and bake for 25 minutes.
- Remove the foil, sprinkle the remaining mozzarella cheese over the top of the boats, and bake uncovered for an additional 10-15 minutes, or until the cheese is melted and bubbly and the zucchini is tender.
- Garnish with fresh parsley, if using, and serve warm.
