What's For Dinner: Grilled Halloumi Salad

Sometimes, after a day that feels like a full spreadsheet of interactions, all I crave is something truly simple for dinner. Something that tastes like effort but requires blessedly little of it. That's where this grilled halloumi salad steps in.

A simple, delicious dinner

It's June now, and the world outside feels like it's humming with life. The days stretch out, long and light, a lovely invitation to slow down just a bit and notice the green all around. For me, this season often feels like a period of steady growth, a steady unfolding, much like watching a garden come into its own. It reminds me that even in our own lives, there are seasons for just 'being' and allowing good things to take root without constant striving. This salad, with its fresh ingredients and straightforward preparation, feels perfectly aligned with that sentiment.

Ingredients

  • 1 block (8 oz) halloumi cheese, sliced into 1/2-inch thick pieces
  • 4 cups mixed greens (spinach, arugula, spring mix)
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cucumber, diced
  • 1/4 cup Kalamata olives, halved (optional, but good!)
  • For the dressing:
  • 3 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and freshly ground black pepper to taste

Instructions

  1. First, make the dressing. In a small bowl, whisk together the olive oil, balsamic vinegar, Dijon mustard, minced garlic, salt, and pepper. Set aside.
  2. Heat a grill pan or outdoor grill to medium-high heat. Lightly brush the halloumi slices with a tiny bit of olive oil to prevent sticking.
  3. Grill the halloumi for 2-3 minutes per side, until golden brown with lovely grill marks. It gets wonderfully soft and a little chewy on the inside, crispy on the outside. Try not to eat it all straight off the grill!
  4. While the halloumi is grilling, arrange the mixed greens on two plates (or in a large bowl if serving family style). Scatter the cherry tomatoes, red onion, cucumber, and olives over the greens.
  5. Once the halloumi is ready, gently place the warm grilled slices on top of the salad.
  6. Drizzle generously with the prepared dressing. Serve immediately and enjoy the simple goodness.
