Ingredients
- Ripe watermelon, about 4-5 cups, cubed
- 4 oz (about 1 cup) crumbled feta cheese
- 1/4 cup fresh mint leaves, thinly sliced or roughly chopped
- 1-2 tablespoons good quality extra virgin olive oil
- Pinch of sea salt
- Freshly ground black pepper (optional, to taste)

Instructions
