That's where these sweet corn fritters shine. They're a little bit humble, a lot delicious, and they come together with ingredients you probably already have on hand.   • 1 can (15 ounces) sweet corn, drained, or about 1 1/2 cups fresh/frozen corn kernels (thawed if frozen)
  • Optional additions: 1/4 cup finely chopped chives or green onions, a pinch of cayenne pepper, 1/4 cup grated cheese (cheddar or Monterey Jack are nice)

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, and pepper. If you're adding any dry spices like cayenne, include them here.
  2. In a separate medium bowl, whisk together the egg, milk, and 2 tablespoons of melted butter or olive oil.
  3. Pour the wet ingredients into the dry ingredients. Stir gently with a spoon or spatula until just combined. Don't overmix; a few lumps are perfectly fine.
  4. Gently fold in the drained corn kernels and any optional additions like chives or cheese.
  5. Heat a large skillet or griddle over medium heat. Add a tablespoon or two of butter or oil to coat the bottom.
  6. Once the oil is shimmering, drop spoonfuls (about 2 tablespoons each) of the batter into the hot skillet. Don't overcrowd the pan.
  7. Cook for 2-3 minutes per side, or until golden brown and cooked through. The edges should look set, and the center should be firm.
  8. Remove the fritters from the skillet and place them on a plate lined with a paper towel to drain any excess oil. Keep them warm while you cook the remaining batter.
  9. Serve warm with a dollop of sour cream, a sprinkle of fresh herbs, or just plain. They're wonderful as a side, or as a light meal all on their own.
