What's For Dinner: Spinach and Feta Stuffed Peppers
May always feels like a deep breath, doesn't it? The world outside is humming with new life, but indoors, I still find myself craving moments of stillness. As an introvert, the exuberance of spring can be a lot, and finding pockets of peace – even in the kitchen – becomes a small act of self-care. It’s during these reflective moments that I often find myself drawn to meals that are comforting yet light, something both nourishing for the body and soothing for the soul. This recipe for Spinach and Feta Stuffed Peppers fits that bill perfectly.
I like how simple it is to prepare, letting me enjoy the process without too much fuss. There’s something beautifully honest about bell peppers, standing ready to be filled with goodness. And the combination of creamy feta and earthy spinach? It’s a classic for a reason. It reminds me a bit of the steadfast promises we find in faith – simple, true, and deeply satisfying. This dish offers a lovely balance, much like the rhythm of a spring evening when the day's busy chorus starts to soften into a gentle hum.
So, if you're looking for a meal that offers a bit of quiet comfort alongside wholesome nourishment, I warmly invite you to try these. It's a forgiving recipe, allowing you to adjust seasonings to your taste, and it always tastes like a little bit of home.
Ingredients
- 4 large bell peppers (any color, though red, yellow, or orange are sweeter)
- 1 tbsp olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 10 oz fresh spinach, roughly chopped (or one 10 oz package frozen spinach, thawed and squeezed dry)
- 1 cup cooked rice (white or brown, leftover works great!)
- 4 oz feta cheese, crumbled
- 1/4 cup grated Parmesan cheese (plus more for topping, if desired)
- 1 large egg, lightly beaten
- 1/2 cup marinara sauce (plus more for serving)
- 1/2 tsp dried oregano
- Salt and black pepper to taste
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish large enough to hold the peppers.
- Cut the bell peppers in half lengthwise and remove the seeds and membranes. Place them cut-side up in your prepared baking dish.
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and cook until softened, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Add the fresh spinach to the skillet (if using frozen, add after onion and garlic are cooked). Cook until the spinach wilts down, stirring occasionally. If using frozen, simply heat through. Remove from heat and let cool slightly.
- In a large bowl, combine the cooked spinach mixture, cooked rice, crumbled feta, Parmesan cheese, beaten egg, 1/2 cup marinara sauce, dried oregano, salt, and pepper. Mix well until everything is evenly combined.
- Carefully spoon the spinach and feta mixture into each bell pepper half, mounding it slightly.
- Pour a little water (about 1/4 cup) into the bottom of the baking dish to create some steam, which helps soften the peppers.
- Bake for 30-40 minutes, or until the peppers are tender and the filling is heated through and lightly golden on top. If the tops start to brown too much, you can cover the dish loosely with foil.
- Serve warm, with extra marinara sauce on the side if you like.
As the days grow longer and the world outside bursts with life, I find immense comfort in these small, dependable moments – like a simple, hearty meal shared with loved ones, or even enjoyed in peaceful solitude. It’s a wonderful reminder that grace can be found in the everyday, in breaking bread and finding contentment in the gifts around us. This dish, for me, is more than just food; it's a testament to the quiet joy of a well-nourished spirit.
