Instructions

- Add the diced onion and bell pepper. Sauté gently for about 5-7 minutes, until they soften and just begin to take on a little color. This isn't a race; let the flavors develop.
- Stir in the baby spinach. Allow it to wilt down, which usually only takes a minute or two.
- In a small bowl, whisk the eggs with a pinch of salt and pepper.
- Pour the whisked eggs over the vegetables in the skillet. Reduce the heat to low.
- Let the eggs set for a few minutes on the stovetop. Once the edges begin to firm up, sprinkle the shredded cheese evenly over the top, along with optional red pepper flakes.
- At this point, you have a couple of options:
- For a softer top: Cover the skillet with a lid and continue to cook on low heat for another 5-8 minutes, or until the eggs are set to your liking.
- For a golden, bubbly top: Transfer the skillet to a preheated oven (around 350°F / 175°C) for 5-7 minutes, or until the cheese is melted and bubbly and the eggs are fully set. This is my preferred method for that extra touch of warmth.
- Carefully remove the skillet from the heat (and oven, if applicable). Let it rest for a minute or two.
- Garnish with fresh chives or parsley. Serve directly from the skillet, allowing each person to scoop out a generous portion.
