Instructions

  3. Sauté Aromatics and Veggies: Add a little more oil to the skillet if needed. Add the minced garlic and grated ginger, stirring constantly for about 30 seconds until fragrant. Don't let it burn.
  4. Add the Harder Vegetables: Toss in the broccoli florets, sliced carrots, and sliced onion. Stir-fry for 3-4 minutes, allowing them to soften slightly but still retain a pleasant crispness.
  5. Add the Softer Vegetables: Add the red and yellow bell peppers and snow peas to the skillet. Continue to stir-fry for another 2-3 minutes until brightly colored and tender-crisp.
  6. Combine and Thicken: Return the cooked shrimp to the skillet with the vegetables. Give the prepared stir-fry sauce a quick whisk again, then pour it over everything in the skillet. Stir to coat the shrimp and vegetables evenly.
  7. Thicken the Sauce: Pour the cornstarch slurry into the sauce, stirring constantly as it heats. The sauce will thicken quickly. Cook for another minute or so until the sauce reaches your desired consistency.
  8. Serve: Remove from heat immediately. Serve your hearty shrimp stir-fry generously over warm rice or quinoa.
