Instructions
Follow these simple steps for a warm, flavorful meal in no time.- Cook the Lentils: In a medium pot, combine the rinsed lentils with vegetable broth or water. Bring to a boil, then reduce heat to low, cover, and simmer for 20-25 minutes, or until lentils are tender but still hold their shape. Drain any excess liquid and set aside.
- Sauté Aromatics and Veggies: While the lentils are cooking, heat the olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5-7 minutes. Stir in the minced garlic and grated carrot, cooking for another 3-4 minutes until slightly tender.
- Add Spices and Tomato: Stir in the cumin, coriander, smoked paprika, and turmeric (if using) with the onion and carrot. Cook for 1 minute until fragrant. Add the crushed tomatoes or tomato paste and cook for 2-3 minutes, stirring occasionally, allowing the flavors to meld.

- Warm the Tortillas: While the filling is finishing, warm your tortillas. You can do this in a dry skillet over medium heat for about 30 seconds per side, in the microwave for 15-20 seconds, or quickly over an open flame for a slightly charred flavor.
- Assemble Your Wraps: Lay out a warm tortilla, spoon a generous amount of the lentil filling down the center, add any optional toppings you enjoy, then fold in the sides and roll up tightly.
